Twice Baked Cauliflower 


2 heads of cauliflower 
1 8oz bar of Philly Cream Cheese 
1 8oz pkg of shredded cheddar 
1 pound of bacon 
little bit of butter 
salt and pepper to taste 


Break cauliflower apart and boil for about 30 minutes or until tender. 
Drain well in a colander. 
Fry or nuke the bacon until crisp and crumble. 
Combine Cauliflower, butter and cream cheese in a bowl and using a mixer or hand masher, mash well. 
Place in a casserole dish or a 9 X 13 pan. 
Top with shredded cheese and crumbled bacon. 
Place in a preheated F 350 oven until the cheese is melted. 



TWICE BAKED GARLIC CAULIFLOWER 

2 Heads Cauliflower 
1/2 Stick Butter 
8 Ounces Philadelphia Cream Cheese 
8 Ounces Shredded Cheddar or Colby Jack Cheese 
1/2 Jar Hormel Real Bacon Pieces(or 3 strips crumbled bacon) 
Garlic Salt To Taste 
Salt And Pepper To Taste 

Break up and boil Cauliflower for at least 30 minutes--until very tender. 
Drain Well!!! In a large mixing bowl, Combine Cauliflower, butter, cream 
cheese, garlic salt, salt, and pepper. Mix with an electric hand-mixer until 
smooth. Add bacon pieces and 1/2 of the cheese. . Whip with electric mixer 
on high. Place in a large baking dish or casserole and cover with remaining 
cheese. Bake in preheated oven at 350 degrees for about 30 minutes. Cheese 
will be melted and slightly browned. Only about 4-5 Grams of carbs per cup! 
You may never miss mashed potatoes again! Serve with sour cream and chives 
for more mmm......!
